Low Carb Chocolate Peanut Butter Mousse Recipe

This is a TREAT.
Let me repeat that...
this is a TREAT!
We don't eat treats every day or even a couple of times a week. If we do, we will have problems, Ladies!
Be judicious with all your choices...but especially with treats.
Don't let all your hard work be for naught.
 
Now, the warning is out of the way, so let's get on to the recipe.
Low Carb (Not Paleo!) Chocolate Peanut Butter Mousse Recipe

Ingredients:
 1 package of Sugar Free Instant (no cook) chocolate pudding mix
1 cup heavy whipping cream
1 cup cold water
1/4 cup natural organic (no sugar added) peanut butter (soften by leaving out of fridge for a bit)
organic cream cheese (optional)
 
Put the heavy cream and the water into your mixing bowl and add the pudding mix a little at a time as you whip them together on low or medium-low.
It takes a bit for the chocolate mix to really integrate into the whipping cream and not be little brown balls, so give it some time to really mix.
Up your speed now and keep mixing until you begin to see the thickening occur. It won't be quite as thick as whipped cream gets, but it should be close to it. Once it seems really blended and thick, spoon in the SOFTENED peanut butter and whip again until well blended.
 
Put into individual serving dishes if you don't plan to share with others right away, so you won't overeat.
It's too easy to do. Trust me, I know!
Pop it in the fridge and let it set for a few hours.
 
(Optional) I've never tried it personally (though I plan to), but I've had someone tell me to add a little room temp cream cheese into this mixture for a higher fat, richer experience.
 
Also, I've limited the whipping cream to 3/4 cup and upped the water to 1 1/4 cup water in order to drop the calorie count a bit. It wasn't quite as thick, but was still nice & thick, so this is an option, too. It's more like a pudding than a mousse this way.
 
Be aware that this is a little higher in carbs thanks to the pudding mix, mostly, and it's definitely high in calories, so go easy on it. It's a TREAT!
