Homemade Ranch Dressing, 3 Versions...Low Carb, Paleo & Green Goddess

Homemade Ranch Dressing
(3 versions)
 
1/2 cup buttermilk (I prefer Marburger Gourmet, as it has less sugars, available at WalMart, usually)
3/4 cup mayo
1/2 - 1 Tbsp Dijon mustard
2-3 tsp lemon juice (or lime)
1 tsp organic minced garlic
1/2 - 1 tsp onion powder (to taste)
1 Tbsp dried parsley
dash of salt & pepper if desired
 
Put all this in a wide mouth jar or some other tall, narrow container that a stick blender will fit into.
Blend away moving around top to bottom to mix it well. Store in fridge. Stays good for 1-2 weeks.
 
Paleo/Non-Dairy Version
Instead of using buttermilk, use plain unsweetened coconut milk.
Use homemade mayo if possible, as well. Use less coconut milk if you want it to be firmer/more like a dip.
 
Green Goddess version(for either above)
Add in 1/2 a small avocado and blend well. I recommend mushing up/blending the avocado first so it will be easier to blend in with no lumps.
