4 Ingredient Low Carb Paleo Peanut Butter Cookies

Here's a quick, easy low carb, gluten free, paleo, sugar free dessert recipe for special occasions or occasional treats.
Just remember, we are NOT to eat dessert but maybe once or twice a week...tops! And remember...count the carbs and keep the calorie count in mind too.


We are training ourselves to stop with all the sweets cravings.
We do ourselves no favors if we continue to have sweets, whether they are low carb or not!
Don't feed the monster!
 
4 Ingredient Low Carb Peanut Butter Cookies
 
1 cup sugar free, organic peanut butter (stir very well when you first open this!)
1 tsp of NOW Stevia Glycerite (or whatever LC sweetener would equal 1 cup of sugar/Splenda)
1 egg, beaten
1 tsp of organic vanilla
 
 
Mix all ingredients in a bowl with a fork. It will form a nice, thick dough.
Roll the dough into little balls and then flatten out into cookie size (these will NOT rise/grow, so they will stay the size you make them).
Use a fork to make the cross-scoring that traditional peanut butter cookies have.
Bake 350 degrees for roughly 12 minutes.
 
Total Batch: 1750 calories, 49g carbs with 16g fiber (33g net carbs for whole batch). Just divide these totals by number of cookies you make out of this batch. That'll be the count for each cookie...so watch yourself. (i.e. 12 cookies? 146 calories EACH cookie, 2.75g Net Carbs EACH cookie. It will be very easy to go overboard!)
 
Now, pay attention to your body. Could you just eat 2? Did this stoke the fires and cause you to crave more sweets the next day? If so, don't indulge again! You're too sweets-dependent, still.
