Those yummy low carb paleo pancakes I cooked at our last session:
Coconut Flour Pancakes
1/2 cup coconut flour
3 tsp of erythritol (or equivalent of non-sugar sweetener)
1/2 tsp baking powder
1/2 tsp Himalayan salt
6 large eggs, beaten
1/4 cup butter, melted (or coconut oil if dairy sensitive)
1 cup of unsweetened vanilla coconut milk (or use almond milk, etc...just make sure it's sugar free and low carb)
1 tsp vanilla extract
coconut oil or butter in the pan for frying
Mix all dry ingredients in a bowl and all the wet ingredients in another bowl. Then, mix them together. Coconut flour tends to clump up, so you'll probably need to really mix it a lot to get most of the lumps out.
Pour into a hot pan with some oil in it. I use medium heat, but you should adjust to whatever works for your stove. It takes about 3-4 minutes on the first side, with the other side cooking in about 1-2 minutes.
Do NOT use sugar free syrup from the store. It's got a LOT of sugar alcohols which WILL spike your blood sugar and most likely give you gas! Do sugar free whipping cream, butter, or Polaner's Sugar Free Fiber Fruit Spread (check the carbs!).
