Easy Make-Ahead Protein Breakfast Muffins

You want faster, easier breakfast options that will help you stick to your new way of eating?
I hear ya!
Want to make something on your off day and just pop it into the microwave for a few seconds each morning?
Try these out...
 
Protein Scramble Muffins

1/2 lb bulk sausage
8 eggs
1 cup of cheese shreds
 
Preheat oven to 350 degrees.
Brown the sausage in a skillet, crumbling & draining once done.
Beat 8 eggs in separate bowl.
Add sausage and 1 cup of cheese to eggs.
Pour evenly into a greased 12 muffin pan.
Cook for 30 minutes.
 
Options!
Try different shredded cheeses:
Colby Jack
Monterrey Jack
Gouda
Pepper Jack, etc.
Mozzarella
Parmesan
 
Use some diced add-ins like:
Broccoli
Green, Red or Yellow Bell Pepper
Onion
Green Onion
Spinach
Ham
Salami
Olives, etc.
 
Top afterwards with:
Salsa
Guac
Chopped Grape Tomatoes
